Background:   Honey-processed coffees get their name from the method used to dry the coffee seed (bean) in which the mucilage (the slick layer on your plum pit) is left on during the drying process.  

No honey is used, however the mucilage does have a similar look and feel to honey as it dries.  The result is a coffee with a more complex and delicious flavor profile.
